Summer, sun and ice cream! This is it, all in one glass. And it’s purely made out of fruit and berries, nothing else. This soft serve nice cream is easy to make using only a blender and it’s a delicious and healthy treat for those hot summer days.
If you don’t own an ice cream maker, you can nevertheless make ice cream yourself. Just put some banana and other fruit and berries in the freezer over night and prepare this crazy delicious and super healthy soft serve nice cream with your blender. I used frozen banana and mango for the yellow nice cream and frozen banana, strawberries and watermelon for the red one. But you could also use other fruits and berries that you happen to have at hand. If you want a creamy texture, it’s best to use banana as the base ingredient and then add some other fruit and berries to your liking.
My girl is quite a fussy fruit eater but she looooves ice cream. And she truly loved this healthy soft serve nice cream as well. So all you parents who are struggling with fussy fruit eaters, just serve the fruit as an ice cream and you will make sure that your child gets enough fruit :). The good thing about this healthy nice cream is that you can give it also for babies. If you have a teething baby, what would be better than this delicious pure fruit nice cream that soothes the itching gums.
- 2 bananas
- ½ cup mango
- 5 strawberries
- ½ cup watermelon
- Slice the fruit and berries and freeze them over night.
- For the yellow nice cream: Place half of the frozen banana slices and the frozen mango slices into the blender and blend until smooth. If your blender isn’t efficient enough to blend the frozen fruit, you can first thaw them for 10 minutes before blending.
- For the red nice cream: Place the rest of the banana slices and the frozen strawberry and watermelon slices into the blender and blend until smooth. Again, thaw them first for 10 minutes if you need to.
- Serve immediately or freeze for 10-15 minutes for a firmer texture.
