Spiralized cucumber salad is the best summer salad to enjoy with bbq food!
It’s fresh, easy and fun. This spiralized cucumber salad is the perfect side dish to eat with grilled food like fish or chicken. Kids aren’t usually biggest fans of salads, but most of them like to eat cucumber. And to make the salad even more fun, I used a spiralizer to make long cucumber noodles or would you call them coodles :). This dish is inspired by a classic tzatziki. Although, this is a salad and tzatziki is a sauce but most ingredients are the same. I didn’t use any garlic and added egg to make the salad more filling.
I was looking for a spiralizer for a long time. It needed to be small, high quality and to be able to spiralize many different vegetables. Now I have found the perfect spiralizer from Microplane. I have made noodles with sweet potato, zucchini, carrots and cucumber. My girl loves to eat all of them! If you have a picky eater, this is a great way to try to get the kids eat more veggies. You can also make regular pasta and sneak in some veggie noodles.
This is how a cucumber looks spiralized.
- 1 cucumber
- 1 hard boiled egg
- 3 tbsp greek yogurt
- 1 tbsp lemon juice
- 2 tsp fresh mint (chopped)
- 1 tbsp chives (chopped)
- salt & pepper
- Boil the egg.
- Meanwhile spiralize the cucumber. Put the cucumber noodles in a sieve and squeeze out all excess water.
- Prepare the dressing. Peel the egg and mash it with a fork.
- In a bowl, combine egg, yogurt, lemon juice and herbs. Add the cucumber noodles and season with salt and pepper.
