This cold avocado & cucumber soup is wonderfully refreshing to enjoy on a warm day. It’s super easy and healthy, too!
It’s been a little quieter than usually on the blog lately. The reason is we both have a small baby and we struggle with our time management. It seems, the babies aren’t taking long enough naps for us to get the food made and photographed for the blog :). We promise to be right back on track soon!
If you and your family love avocados, I’m sure this soup will be a winner. Serve with some bread for a bigger meal. This avocado and cucumber soup is nice and creamy. I like to enjoy it with toasted sunflower seeds for some crunch.
This soup is a perfect meal for anyone with a tight schedule. It literally takes 5 minutes to get this on the table. And it’s meant to be eaten cold – something new moms might appreciate ;).
This soup is very allergy friendly (vegan and gluten-free) and suitable for the whole family. If you leave some of the spices out, even small babies can enjoy it.

- 3 avocados
- ½ cucumber (chopped)
- 4 tbsp lemon juice
- 1,25 dl / ½ cup water
- handful of basil
- 2-3 tsp tahini
- 1 tbsp chive
- salt & pepper
- chili flakes (optional)
- sunflower seeds
- olive oil
- Place all ingredients (except sunflower seeds) in a blender and blend until smooth. Add some more water if needed.
- Season with salt, pepper and some chili flakes iif you like.
- Serve with toasted sunflower seeds, some more chili flakes, chopped chive and a few drops of olive oil.
